Hospo Poaching

Eggs benedict 


What quality indicators are you looking for?
High proportion of thick white to thin white, Yolk is in the centre, Firm round yolk, Clean and well-shaped. beore you crack the egg you need to do a float test which is putting the egg in a bowl or pot of water and if it floats then there will  be between the shell and the egg but if it sinks then its perfect because the air is evenly distributed around the egg.

What method will you use?
- Bowl into water- crack egg in a bowl to make sure there isnt any egg sell in the egg then tip into water.
- Swirl water then tip the bowl
- Glad wrap- piut glad wrap in a bowl or cup. crack egg into glad wrap and tie it so there is no air.

How long will it cook for?
3 minutes

What issues could occur?
the egg could not taste right if the egg is undercooked and the white will still be runny and snotty looking.

How do you know it is cooked?
Soft white

How do you know it is cook/under/overcooked?
The egg whites should be solid but the yolk should be still runny

What garnishments/accompaniments and sauces are you serving with this?
Hollandaise sauce, spinach and bacon on an English muffin

Poached Pear:
What quality indicators are you looking for?
-Pear has no blemishes. no grime or dirt on the skin. nice white colour on the pear. soft but firm when touched.

What method will you use?
-core the bottom of the pear
-boil water then bring down to a gentle simmer, add sugar and vanilla beans
-put pear in water and cook or around 20 mins untill al-dente (soft but still firm and got a crunch)
- server on plate wiht the empty vanilla pod as garnish.

How long will it cook for?
- 20 minutes

How do you know it is cooked?

- when knife can easily be put through it

How do you know it is cook/under/overcooked?
-The pear isnt mushey and can put a knife through it without breaking the Pear.


What garnishments/accompaniments and sauces are you serving with this?
-Vanilla bean.
- drizzle sugar syrup ontop of pear
- vanilla ice cream or any type of ice cream



Thai fish curry:
What quality indicators are you looking for?
Fish has a nice colour, soft but not too soft so the fish dosent go to mushed when touched.


Style of poaching happening?
Poaching


Quality you will look for in fish?
scales are shiney and still in shape and not folded.
fish has a nice bright white colour or pink if using salmon.


What are the key indicators?
  • 71-82 Degree
  • 2-3 min 
  • the fish is soft but firm enough to hold it's shape when cut or pressed on
  • we want to avoid raw fish as might have a distinguish flavour.
  • the fish is Opaque (flake nicely)


What garnishments/accompaniments and sauces are you serving with this?

- Egg noodles
-rice
-Curry sauce

BEEF WRAPS

Ingredients:


  • 1 wrap per person
  • Lettuce
  • Cheese
  • Tomato
  • Grated carrot
  • ¼ onions
  • 1t oil
  • Sauces – tomato, bbq, mayo, hummus, chilli
  • 70grams of chicken or 1 breast per table


Method:


  1. Sauté the chicken and onions together in a pan with oil, high-med heat
  2. Chop and grate the vegetables you require
  3. Place Wraps in microwave for 20 seconds
  4. Place filling onto wrap, roll, pierce with a tooth pick to keep in place (optional)

  • To wear and apron
  • to make sure that the beef is cooked and that the lettuce was washed from dirt and bugs
  • to wash hands before cooking or handling food




the toasted bread from Hong Kong, the bread has been sitting in the windowsill and now it has grown white fluff around the crust and has a bit of green mold on one of the corners.

The one from the fridge, is still fine because the bread has been kept in a cool place where bacteria wont grow or multiply.


The toast from the fridge has gone all soggy and has got no mould on it but still looks good to eat


The bread from Sydney has got a yellow stain on it while the toast has no stain but has some white fluff around the crusts

The bread from London has gone hard like the toast but the toast has gone a little bit harder but still has no mould stains on any of the bread. the bread was stored in a warm area.

PBL

Group:
Me, Damien, Kegan and Dasharn (4 civilized men)

The topics that we have chosen is public art.

We have only found 1 website that was actually helpful to us.


The issue that it could lead to, is that it could give people the feeling of loneliness, or it could be classed as vandalism.


What was a good idea was that we where going to put up a poster for the community to write underneath what they would like to do before they leave school.


The whole idea for this, is becuase we want people to have a sorta bucket list that they would like to do before they leave school and have some goals.

Persuasive Essay

Should Gaming be allowed in school or not?

Should gaming be allowed in schools or should it be banned in all schools? Gaming can help us or it can't  help us later in life. Gaming in schools should be both allowed and not allowed  because it can teach us new techniques, but we could get off task, we could get distracted and some people could get degrees at university for gaming

Gaming can give us new tips that we haven't learned or techniques to use while on a computer.An example of this, is that you can increase your ability with typing on typing.com.Typing.com is a website where it teaches you how to improve your typing and helps you get faster and learn the keyboard/number pad of by heart, or it can help you to put the finger on the right place on a keyboard.This techniques is one out of many which can help you while using a computer

Even though gaming can teach us new techniques, but we could get distracted while we are in another class.We can get distracted by fidgeting while the teacher is teaching or we could distract others from they're learning.Teachers hate students that get distracted but not all of them do. Gaming in schools should be allowed but students should not fidget while in class or in a exam.Over all, we shouldn't get distracted or fidgety but the council should allow games in schools.


Students may do gaming for a subject but when they go to another class,they can get off task and play games instead or leaning.This happens when a student gets asked by a teacher to do work but instead goes and plays game behind the teacher's back.Students play behind the teacher's back because they either think they are cool,think that the work is all boring and stupid or they could just not wanna do work at all.Students should only play games either in free time or in their own time. They shouldn't play games behind the teacher's back.

Learning good techniques with gaming in schools, can help us decide what we want to do when we leave school. Some students could want to go to university and get degrees in gaming or go all out “geek” mode and just sit around and do nothing but gaming.
Doing nothing but gaming is really bad for your health. Just sitting around doing nothing can make you fat and people will call you lazy.Gaming can be distracting for teacher's and it definitely can teach us knew techniques, but most of all, people can really like the idea of gaming so they want to go to university after finish school.

Gaming  can help anyone but they're are also consequences with gaming.
Gaming can have consequences but most of them can be good later in life,like, getting a degree in university,getting distracted,getting off task and also teach us new techniques.

The council should allow gaming but on certain terms and conditions

Should dangerous sports be banned??

Well dangerous sports shouldn't be banned because of the fact that people would like to have a challenge or even take a risk.  Dangerous sports IE base jumping or running with the bulls are all dangerous and very scary but it also gives people the chance to have a go at something new to do or try. I reckon that dangerous sports should not be banned because people can risk themselves if they want to do it and to give it a go.

Risk/Challenge speeches

Speeches,Speeches, speeches. I hate them! I had to do a speech about something starting with s. When I heard that we were doing speeches, I felt nervous and scared. I had about 1-2 weeks to plan and practice my speech. We all had to do a speech. It was a real challenge for me because of the fact that I was bad at writing speeches and presenting them.


I didn't know what to do for my speech. Then I thought why not do it about ships. So I went on the internet and searched up facts about ships. After a week or 2, my speech was ready to present to my school. I felt nervous. I already could see what it would be like in my head. I also had sweat crawling down my face just  thinking about it. Then it was speech time and I had to go first!! Yayyyy…Not!!!


When they called  out my name I felt butterflies in my stomach and my knees were wobbling. Everyone was looking at me while I was walking up to the stage . Then I started. First I went quiet and my throat when dry like the grass in Africa. I could barely breathe, but I managed to start talking but softly. I then started to get louder. Everyone was looking at me like “what the hell is he on about?” and “why are you telling me this when I already know this?”


While I was doing my speech, I mucked up a lot. Everyone noticed, and I got to nervous to talk anymore. That nervous that I nearly fainted. But I kept trying and went to finish off my speech. I thought I was finished but instead I had 2 more cards left. I was saying to myself in my head to keep going soon. It'll be finished then someone else can do theirs but it was no use at all. I still felt sick and nauseous.


Finally, I was finished. I was sweating like a  pig. The butterflies in my stomach wear gone  and I could breathe again. My throat was still dry but It was going away slowly. On the way down from the stage on the stairs, I tripped and fell off the stairs and completely embarrassed myself. I looked up and everyone was laughing and pointing at me. Even the teachers were laughing! I was embarrassed. My face was red like the sunburnt I had in the weekend.

From that day forward  I promised myself to never do speeches again, but if I did then I would be careful walking down the stairs and make sure I know my speech of by heart
